Working with Beth on a new eating plan was a great experience. She took the time to get to know me and my particular medical conditions and challenges. She respected my goals and together we came up with ideas and an approach that I can use everyday. She was very committed and concerned. I appreciated her patience and care.

From Pre-Diabetic to Normal Range in a few months

Working with Beth these last few months has helped me immensely. I thought I knew how to eat and live a healthy lifestyle, but I quickly realized I had a lot to learn! Beth has a very individualized approach that really sets her apart. After several sessions together, where she learned my eating preferences and challenges, Beth & I went grocery shopping where she introduced me to different, healthier choices. Throughout our sessions, I have learned so many small yet impactful tricks – from eating to exercise. While I’m still a work in progress, I can already feel and see the difference. Before starting this plan with Beth, I was pre-diabetic. But after just a few months, my A1C is already back in the normal range, which I’m just thrilled about!

Potassium level has been stabilized

After my mother, Irene, was released from the ER during the height of COVID due to complications related to a very high potassium level, she needed a nutritionist to help her modify her diet. While others were unwilling to speak with us, Beth made time for us.  She asked my mom to write a list of what she typically ate and drank (with quantities) for breakfast, lunch, and dinner, as well as in between. She helped her modify her meals, provided alternatives, all while emphasizing that it is O.K. to “cheat” on occasion.  She even checked in on her to see how she was doing. Beth is a dedicated professional who is knowledgeable, realistic, and caring. My mom’s potassium level has been stable as a result of working with Beth. We highly recommend her.
